Camarillo

I went shopping in the Camarillo outlets with my sister and her friend Kristen in the search of killer deals. Although we did manage to find a couple things, I wish I would've found more! I have such a picky taste that I almost ruin it for myself. I am really particular about how something fits on me that I just because really bummed out, BUT my sister and Kristen managed to find some really awesome things. 
On the road back north we got stuck in 6 hours traffic on the i5 and it was just horrible. It was supposed to take 2 hours and it took a wopping 6. I was pulling my hair out/ dying by the time we actually arrived home. We also had expected the accident from earlier in the day (which we saw really in the morning driving down) to be cleared by the time we left at night but it was just back up even worse than before. Regardless of all the traffic, I still had fun.

Enchiladas? Yes, please

I was looking at some pictures of food yesterday and I came upon a bunch of healthy mexican food options. I saw a picture of a bunch of enchiladas in a pan and I got to thinking... my whole life I fried my tortillas, why didn't I think about baking them? I looked at a bunch of recipes online and I just didn't have the bajillion of ingredients they listed so I just gave it a go by myself. I made it SO easy. Really, you don't need much at all


These are how they turned out. DON'T THEY LOOK DELISH?!


What you need:
Sauce
  • 2 small cans of tomato sauce
  • Tablespoon of basil
  • Pinch of salt
  • Pepper to taste
Other
  • 2 chicken breasts
  • Mixed steak spices
  • Est. 12 corn tortillas
  • Queso Ranchero/Fresco (Mexican Cheese)
  • Few leaves of lettuce
  • Sour Cream to taste

I thawed my chicken entirely and preheated my oven to 375. I seasoned the chicken pretty thoroughly  with the steak spices and put it in the oven inside a deep dish pan for 35 minutes. In the meantime I poured both sauces into a bowl and mixed the basil, salt and pepper together. If you want to add more spices, go for it. I'm pretty simple so I left it at that. Once the chicken is done (leave the oven on!) , let it slightly cool and pull apart the chicken into small pieces. It should be pretty shredded up. Now shred some of the queso fresco into the corn tortillas while added some shredded chicken along with it. Roll them into decently tight rolls and line them up in a glass 13x 9 dish. Once theyre all lined up pretty nicely, pour the sauce concoction evenly over all the enchiladas and sprinkle some more queso fresco over the top. Put the dish in the oven again for 15 minutes and they should be ready! :)

Let cool and top off with a dollop of sour cream and shredded lettuce. and they should be super yummy!

Spring is Here

It feels AMAZING today! I stepped outside and I just smiled at the very light breeze that went through my hair. This weather only lasts about a whole two weeks here before the scorching heat comes for the next 8 months so I'm taking advantage of it while it lasts! I pulled out my lightest, most simple dress and some sandals and went on with my day.

Mini Haul!

I decided to do a little retail therapy yesterday, and by little I really only mean like 12 dollars but hey, whatever makes you happy right?


I woke up feeling like total crap yesterday, so I slept in as much as I could. As I was in bed, I was searching facebook and on there I saw some pictures posted from my local used bookstore showing all the new books posted and obviously, first come, first serve, so I got my sick little butt up, put some pants on and drove. Turns out sundays are pretty much the most crowded days and I could hardly get through the store but I managed to swipe some books I saw and made my way out, and quickly. All only for a little over 6 dollars!

A little later, my boyfriend and I went to target and I honestly can't tell you the last time I went to target and HAVEN'T looked at the makeup. We made it to the NYX section (can you believe they FINALLY put a NYX section??! YES!!) and I was swooped in. I couldn't decide on what to get, but just decided on a bunch of coral goodies. I picked up yet ANOTHER lipgloss in the color "Nude Peach." And it matches my nail polish! Fun!

Pretty much right next to the NYX section, I saw a rather large section of Baby Lips and was sucked in. I heard Nikki Philipi talking about them on youtube and saw how great they looked on her, so I decided to pick myself up one. Although there is literally no pigmentation coming off on me, it is surprisingly hydrating. More so than my favorite basic blue Chapstick brand chapstick! This is definitely going to become my go to night time chapstick or for moisturizing when I'm planning on using matte lip products. I'm not quite sure if I can let go of my daytime Chapstick quite yet!


As for my nail polish, it looks like it matches my lipgloss but it only really does when, it's been dried because for some reason, nail polish seems to darken or just change colors entirely when top coats have been applied. I wanted to love this nail polish, but on me, I feel like its too dark of a pink and it just makes my hands look a little muddy. I feel like this would be a great color for darker skin tones! The color is "Soul Mate" by Sinful Colors.

That's pretty much all I got, but I was pretty excited to get a couple fun items! ^~^ Plus who doesnt like Coral?!

Updates and a Mixed Range of Emotions

I've been super duper into instagram and just taking photos on my phone in general so of course you can just expect a large folder of photo editing apps on my iphone. I unfortunately haven't been able to photograph anything for the blog since my SD card for my Nikon broke (under mysterious circumstances) but I recently found a smaller spaced SD card while scavenging my room so expect more soon! Anyway, as for iphone apps a complete MUST is "Afterlight." Although it is a paid app, it is well worth it with all its customizable features and such. Plus, what is a couple dollars to people who worked their butt off to give you the app in the first place? A recent favorite of mine, I have no idea what it's called but its a bunch of characters and "cute." So, for those of you who tend to over-kawai their photos, you probably know what I'm talking about. I'll try to post the app name as soon as I can figure out how!


Anyway, isn't this so cute?! I was just testing out its features with this, so you can really just do as you will with how overboard you want to go!

ANOTHER FAVORITE OF MINE! I have been eyeing Hoy's Saltwater Sandal for the past 6-8 months and FINALLY, the red has come back in stock! I managed to steal myself some red ones on amazon for a wonking 25$! Thats almost half off the original price. For those of you also in love with the style of these, make sure to check amazon first. ONE COMPLAINT about these those, which is more my fault than anything is that theyre a teeeeeny bit too small. I am typically a 7.5 in womens and decided to think ahead with stretching and ordered a 7 but after a couple hours of wear, my feet were in pain. Hopefully my stupidity soon pays off and these sandals stretch like others say they do!


So, here comes the bad news. My first pet, Pixel, has gotten really ill these past couple months and it is really taking a toll on him. In early February I took him to the vet after he refused to eat and poop. We found out his heartbeat was erratic and he was extremely dehydrated and so we put him on an IV and some antibiotics. Now a whole month later, he seems to not improve. I took him to the vet again for his annual shots when the vet told me of his heart murmur and heavy/stressed breathing. Again he was dehydrated so we put him on an IV and left him for the day. After some xrays, we found out that he has a build up of fluid in his lungs and that it is pushing his heart towards him spine which explains his erratic breathing. As for the heart murmur, we need an echo to be done soon to figure out the severity of it. 

Laying with him in bed now just makes me really cherish the time I have with him. He is my first real pet and I spent a long time of my life raising him and loving him so to see him so sick breaks my heart. It would honestly kill me to know we can't do anything to help him, or much less to know we can't AFFORD to help him. I'm just really upset and want to make my kitty happy and healthy again.
